Jean Kotterman-Mumau says:
I am a working single mom of three children. One is married, one is finishing up college, and one is in high school and home full-time with me. I have always been a teacher, and most recently have been working as a Reading Specialist, helping children with reading delays due to Covid, learning disabilities or other reasons.
Early on in my 30s, I became interested in eating “low-carb” as a means of losing weight, but most recently, I have tried eating strictly keto as a way of combating colon cancer and reducing the side effects of treatments such as radiation and chemotherapy.
